I’d Like to Give a Round of Apple-ause….

To apple cinnamon over night oats!

So comfort-food-esque.

So delicious.

So nostalgic…

These oats reminded me of back in the day when my Grandma (hi grandma!) used to bake apple pie and the glorious scent would wander through the house searching for a nose to tickle with it’s aroma.

Okay, these oats didn’t actually remind me of that. But I thought it seemed like an appropriate intro. They did kind of taste like chilled gewy apple pie though – not complainin’!!

These have to be by far one of my favorite overnight oat recipes that I’ve made!

Apple Cinnamon Overnight Oats with Almond Butter Dollop!

For the Oats:

Notice the Hemp milk- can't wait to get through it so I can get back to my regular programming almond or flax milk.

  • 1 small apple (I used Pink Lady)
  • Cinammon
  • Maple syrup (to taste) I used a tiny bit – but really not necessary they were pretty sweet!
  • 1/2 cup rolled oats
  • 1 tbs chia seeds
  • 2 tbs. raisins
  • 1/2 tsp. vanilla extract
  • 3/4 cup non-dairy milk
  • pinch of salt
  1. Chop up the apple into little chunks, then place in a microwave safe bowl.
  2.  Add a cinnamon and maple syrup to the apples, along with a splash of water.
  3. Microwave for about 2 minutes.
  4. Add the rolled oats, chia seeds, raisins, vanilla extract, milk, and salt in the bowl.
  5. Stir well, cover, and refrigerate overnight.

I added some Almond Butter on top – and you bet your bottom dollar it was a great breakfast!

I almost feel bad about my recent almond butter lovin’. I feel as though I’m neglecting my first true nut butter love. Peanut butter. (Especially since I’ve discover the wonders of peanut flour).

After opening the jar though, I was reassured that it had gotten its fair share of attention.

I’ll stop for a brief moment and share a great money-saving tip for all you make-up wearing folks out there!

Coconut oil is the perfect eye make up remover!! This huge jar is about ten dollars- and will probably last you for years of eye make up removing! I just put some on a cotton pad and remove away! I know that the oil is good for your eyelash health as well.

Pretty darn impressive!

On to other news:

Lately my body clock has been waking me up about an hour before my alarm clock. So today, when waking up promptly at 7 a.m. – do you know what I decided to do? Make dessert, duh!

I made that Nutella inspired dessert I was writing about yesterday. MMMmmmm! I will post the recipe tomorrow once I’ve gotten the boyfriend taste-tested approval!

Needless to say, I was pretty full after breakfast. Dessert plus oatmeal = woooweee FILL-ING.

I think I’ll have my second breakfast for lunch today.

Mexican Scrambled Eggs - topped with avocado and salsa. Crackers and Black Bean dip on the side!

Just what the doctor ordered!

    I’ve tried so many recipes for overnight oats, all with different ingredients. And this is the only one I have found so far that I actually really like! So thanks for the great recipe!
