Meet My New Love, Mason.

Oh Mason, how I love thee.

The things I can say about Mason..

Jar that is.

I have a new found love for mason jars!

I have always loved jars of any kind, but there is just something so appealing about mason jars. They’re so retro, yet so chique, yet country… All at once! That’s versatility if you ask me!

Because everyone is moving out, we had this “stuff swap” room in my residence, where people bring clothes/books/stuff that they don’t want or need anymore. Whatever is in the room is basically a free for all!

Among a few other things, I found some lovely mason jars!

After a thorough washing- they were ready to go!

I’d like to introduce you to:

Steel Cut Oatie, a single bachelor looking for a companion…

And also, meet:

Rolled Oata, a bacheloroatte in search for a perfect partner…

Well, whaddaya know… One day, Rolled Oata and Steel Cut Oaty crossed paths and hit it off!

Now they live happily ever after in their humble pantry, creating beautiful children breakfasts almost every morning.

Such as this baby here:

Chocolate Peanut Butter Banana Overnight Steel Cut AND Rolled Oats

Rolled oats combined with steel cut oats in overnight oat recipes create the perfect texture bound bowl of flavor infused breakfasts.

It’s my new favoroat combo!

In the mix for one serving: 1/4 rolled oats + 1/8 cup steel cut oats.

Try it, you’ll like it! Trust me, I know what I’m talking aboat.

Back to jars… Another nut butter jar bites the dust!

Bye bye hazelnut butter, it was nice knowing eating you! Till we meat again!

I don’t know if you recall me saying that I would gladly take on the challenge of trying to finish all my nut/seed butters before my big move… Well, I’ve been doing pretty well!

Do you remember this pic?

Well this is what I’ve got left:

+ some Tahini (which I forgot to add)

And they’re all nearing the bottom:

I don’t know if it’s something to be proud of that I’ve conquered almost all of my butters…

But, not gonna lie, I’m pretty proud!

Although, I do REALLY miss Almond Butter, it has been weeks since I’ve had any, and I CANNOT wait to go get some more! After I finish the cashew butter I will!

Out of all my nut/seed butter experiences, I have had the hardest time getting through the pretty small jar of cashew butter! I like cashews, but in butter form, it just isn’t my favorite! If I go buy almond butter or peanut butter before I finish the cashew butter…then I don’t know if I’ll ever finish it. And I. Must. Finish. It.

If I had to choose three butters that are a definite win and pantry/fridge essential in my book, they would be:

  1. This almond butter
  2. Organic creamy peanut butter
  3. Sunbutter
  4. Coconut Butter (Okay I had to choose four…couldn’t decide!)

Some other butters that I’m curious to try are Pecan Butter and Pumpkin Seed Butter!

Okay so enough with this butter jargon!

Here are some great illustrated ideas with all the things you can do with mason jars! The possibilities are endless!

Have a fantastic day!

Foods That Intrigue!

Good Morning Y’all!

Here are some foods that INTRIGUE me…

I was at whole foods the other day and saw this:

I’ll pass on the bacon salt… But the Chocolate, Cinnamon & Chipotle Salt, Curry Salt, and Vanilla Salt – I’d LOVE to try!!

Cabernet Sauvignon Salt!?!?! YES PLEASE!

These are a bit out of my price range, but once I make my first million, these salts will be on top of my purchase list…Along with:

Oh EM GEE! Both of these spreads sound AMAZING! Ever since I saw a blog review of these two rawtella products, I have not been able to stop thinking about them! I must try these some day!!

Lastly, I saw this product the other day on the Almond Breeze Website:

I absolutely must must try these! Almond Milk AND Coconut Milk Combined?!?!?! TWO great non-dairy milks having a baby?!?! What could possibly be bad about that?! MUST TRY!!!

On to other news,

I have my first final today @ 3:30… Feeling pretty prepared! Although, I’ll definitely do a little bit more reviewing before!

To prepare my brain this morning for another day of studying and test taking, I started out the morning with some BRAIN FOOD! REALLY REALLY GOOD brain food!

Banana Blueberry Oatmeal topped with Sun-butter

I forgot how AMAZING hot oatmeal is… I was on the overnight oats train for so long that I neglected to visit my good friend hot oatmeal. This was really delicious. Here’s the recipe!

Ingredients:

  • 1/2 cup rolled oats
  • 3/4 water
  • 1/4 non-dairy milk
  • 1/2 ripe banana
  • 1/2 cup frozen blueberries
  • 1 tbs chia seeds

Procedure:

  1. Combine the rolled oats and water in a pot on the stove top on medium-high heat.
  2. Stir, Stir, Stir- then add in the mashed banana and chia seeds.
  3. Stir, Stir, Stir, – then add in the blueberries and 1/4 cup of milk.
  4. Stir until warm and cooked!
  5. Top with nut/seed butter of choice!

Great Brain Food: Blueberries, oatmeal, nuts and seeds!

I’m passing my exam thanks to this breakfast πŸ˜‰

Wish me luck!

Now off to do a little more studying!

Have a wonderful Wednesday!

A Food Network Experience: Triple D’s Style!

Hey there!

In order to celebrate my roommates birthday yesterday, she suggested we go here:

As soon as I Googled Jethro’s Fine Grub and found out it appeared on Diners Drive Ins and Dives, I was totally in! (to view the you tube clip from Jethro’s on Triple D’s click here)

I am a HUGE Food Network fan, and anything having to do with the food network gets me pumped!

So I was PUMPED to go here!

After about a half of an hour wait outside (the place is absolutely tiny & busy)… and another 30 minute wait for our food..

The BIGGEST MOST HUMUNGOUS PANCAKES I HAVE EVER SEEN arrived at our table.

The birthday girl had to go big or go home, and big she went!

Do you see the size of those things????!!! They took up half of the table!!!

I was definitely neither game nor hungry enough to get their “pancakes”

So I opted for a veg friendly option appropriately named:

Got it without the rice though.

It was delicious!! Loved the green curry sauce and apple fennel slaw!!

I ended up ditching about 3/4 of the tortilla portion because it was just too much tortilla for me! I dumped the rest of the filling on the salad greens and gobbled it up! YUM-Y!

Brenna did pretty well with her pancakes considering the size..

You know that pancake portion size is OUT OF CONTROL when…

  1. Basically everyone whips out their camera phones to take a picture as soon as their pancakes arrive…
  2. They take up most of the table… and
  3. You need… not one, but TWO take home containers for left overs!

This just makes me laugh... I am STILL stunned at the size of those cakes!

All in all, I had a great time and great experience doing my Diners Drive Ins and Dives thang! Happy Birthday to Brenna!! Thanks for taking me here πŸ™‚

Guy ate here..And so did I!!

Woot Woot!

Has anyone else been to a place featured on Triple D’s? If so.. How was it?!?!

Today is going to be another study filled day!! Really looking forward to it!!!

not… πŸ˜‰

But first, I’m going to take some of this energy out at the gym!

I just fueled up with a nice breakfast:

Chocolate Hazelnut Smoothie: 1/2 frozen banana, 3/4 scoop chocolate protein powder, a bit of cacao powder, 3/4 cup non dairy milk, 1 tbs hazelnut butter. Along with a triple threat Banana Nut Blueberry Muffin!

I couldn’t wait to take a sip and a bite before the pic was taken – ’twas a hungry morning!

I hope everyone has a wonderful day!

xoxo Ellie

What’s Love Got to Do With It? Nothing…It’s All About Options!

Bon matin tout le monde!! (Good Morning Everyone!!)

Yesterday’s studying was pretty productive!! (especially since I was well prepared with my study snacks!)

Today I’m back at it again! The library: here I come!…

With snacks of course.

Snacks… and Options, lots of options!

I prepared my library snacks last night so I wouldn’t have to stress this morning… Along with options though, love does have a lot to do with it (the title of my post lied!)

I love preparing and packing snacks/ meals to go. There is something I find so charming about perfectly packing foods into their own little dedicated container…. I find it fun. And don’t get me started on the containers themselves…. Bring me to a container/jar store and I would have a hoot and a half! I love containers.

Oh, and I love snacks too.

When I pack snacks I like to have LOTS of options…

How do I know what I will feel like eating at that moment when my face is planted in a book and the belly monster begins to slowly creep up and suddenly….HUNGER STRIKES!

Will I want something sweet? Something salty? Something sweet and salty? Neither? Will I want crackers? Will I want rice crackers or Mary’s crackers? What if I just want chocolate?!? Or oatmeal?!?!

For Pete’s sake, I GOTTA have options, ya know?!

So, here’s what I prepared for my study snackin’ for today!…

Apples with cinnamon in a jar... And a new concoction I stirred up! It is green because the dip is made with pumpkin seed protein powder (which is green) and peanut flour mixed together with H2O.

My mom recommended this pumpkin seed protein powder to me, and when I saw it was on sale, I thought it to be a golden opportunity for its purchase! I really love it and am SO glad I bought it… Mama knows best..(Usually) πŸ˜‰

A kitchen device I would rather not have to live without!! The apple slicer - The symmetry of the slices are not always spot on - but that's okay! I eat the little ones first and save the best (big slices) for last!

I also roasted the rest of the purple potatoes from the market, with broccoli, garlic, rosemary, and nutritional yeast. All coated in a little grape seed oil.

After roasting the broccoli and potatoes, I added some raw sliced red pepper, kalamata olives, salt, pepper, and some apple cider vinegar.

I packed the mixture up in this handy container and topped the veggies with some falafel and avocado hummus.

All in all: I packed…

  1. Cinnamon apples with pumpkin seed/peanut flour dip.
  2. A bag of baby carrots.
  3. Crackers… (2 kinds: Mary’s and brown rice)
  4. Trail Mix
  5. Dark Chocolate
  6. Roasted veggies w/ falafel and hummus.
  7. Apple cinnamon oatmeal (in almond butter jar)
  8. An orange
  9. 2 Larabars
  10. And brewed herbal tea in a jar.

Is this too much? No, it is not…

Not only will I not let myself go hungry, I refuse to let my study partner go hungry as well. Or anyone in the library for that matter…

Sharing is caring πŸ™‚

There is a very high probability that I won’t eat ALL of these snacks… But at least I got me some options!

Plus, I know that I am not packing too much food when…

It all fits into my FAVORITE lunch bag! I can still close it and everything!

Have a happy and love filled day,

Ellie

Lip Smackin’ Study Snackin’

It breaks my heart a little that I’ll have to limit my time in the kitchen for the next couple of weeks….

Classes are officially over for the term. Now I’ve got to spend time studying for finals!

Here are some of my favorite/easy/ healthy/portable study snacks:

I know I’m not the only one that’s got to get their study snackin’ on! These are some ideas for YOU too πŸ˜‰

Apples sprinkled with cinnamon dipped in nut/seed butter! (this happens to be a combo of almond butter and sunflower seed butter)

Just squeeze some lemon juice on the apples to prevent browning and you're good to go!

Any fruit dipped with nut butter! (a chickpea accidentally fell into the nut butter) woops!

These are great frozen!

Protein Smoothies!

Veggies and crackers dipped with hummus! I just made this hummus this morning! IT'S DA BOMB! Avocado hummus - this recipe!

That's what I call a portable healthy snack!

Oatmeal in a jar! Just screw the lid on tight and throw in your backpack! Yummy study snack/meal!

Dark chocolate and trail mix..

And last but not least:

Tea, tea, tea, and more tea!

What are your fav study snacks? Or favorite snacks in general?!?

Happy Studying!!! and/or Happy Snacking!

Realization: I’m a Butter Hoarder…

Hello! πŸ™‚

Before talking about my butter hoarding, I’ll start with a little hummus, last night’s dinner, and breakfast!

Remember yesterday’s Pizza Hummus that I made?

Well, this is what’s left of it:

Taken before I used my finger to scoop up every last bit!

I told ya, I take my hummus eating seriously…

Must make some more!!

I’m running out of food in my fridge, so last night’s dinner was a bit of an improvised quick meal. But my was it DE-LISH!

Brown rice tortilla, apple slices, cinnamon, almond butter - all microwaved a teensy bit! SO good!

Love cinnamon and apples! πŸ™‚

Last night, I also prepared some overnight oats!

Mango Raisin Protein Overnight Oats
1 scoop vanilla protein powder, 1 tbs coconut flour, 1 tbs chia seeds, a little bit of mango and raisins, 3/4 non-dairy milk, and some stevia for sweetness. (More milk added in the morning)

These were just okayyy… I mean, still good. Not my fav!

My favorite part about these oats was the topping: Sunflower seed butter and coconut oil!

When the room temp coconut oil encounters the cold oats it turns into a crunchy shell!

My obsession with nut and seed butters made me want to try sunflower seed butter (which I’ve never had before), so when I saw it the other day… it beckoned my name. My lack of nut butter purchasing rationality justified my buying it.

I have realized I am a nut butter hoarder!

I now am the slightly embarrassed proud owner of 7 different nut and seed butters (I know it’s a little bit ridiculous… but I just can’t help myself) – Plus, they all get put to use! No Butter Left Behind..

Hazelnut Butter, Sunflower Seed Butter, Coconut Butter, Almond Butter, Sesame Seed Butter (Tahini), Peanut Butter, Cashew Butter

I’d say that my all time favorite is the Almond Butter (sorry PB!). I’m officially converted..

I will probably not buy the Cashew Butter again (my least favorite)…

And the Hazelnut Butter (although amazing) is a bit pricey for the little container – so this’ll be a once in a while re-purchase.

The others though, I use quite often!

Is anyone else a butter hoarder? What kind of foods do you “hoard”?

Moving on…

Yesterday my brother called me and asked me what he should buy at the health food store… This gave me an idea for a post…

For most of my breakfasts, I more or less use the same-ish ingredients, so here are the essentials if you’d like to make some breakfast recipes I have posted.

  • Rolled Oats
  • Chia Seeds
  • Coconut Flour
  • Unsweetened Cacao Powder
  • Good Protein Powder (Vanilla) and Chocolate if you like…
  • Non-dairy milk
  • Maple Syrup
  • Cinnamon
  • Bananas
  • Your favorite nut/seed butter(s)

Frozen Banana and Frozen Fruit

Alot of my recipes use bananas!!

Frozen bananas and fruit for smoothies.

Microwaved frozen bananas, or just ripe bananas for oatmeal breakfasts.

Some other fun things I use (definitely not necessary):

Stevia, Coconut Oil, Sultana Raisins, Almond Flour, Cacao Nibs, Peanut Flour, Pumpkin Spice

Alot of these ingredients are a bit pricey, but are really worth it to me. I feel really great when I eat all this healthy stuff! Plus, they last pretty long!

(I got the peanut flour, almond flour, and stevia off of iherb.com) JTLYK (Just to let ya know)

Hope that this helped!

I’ll leave you with a bit of a disappointing lunch-making failure – (which happens to me quite often)

I’m diagnosing myself with “Unrefined Egg Flipping Skills Syndrome” (Hope this isn’t chronic!)

That poor little broken yolk 😦

I’m determined to master the egg flip!

Have a great tuesday!

This One’s Chocolatey!

Happy Monday Everyone!!

“Happy Monday”… ha, that might be an oxymoron…

Just in time for Monday, the dark rain clouds have reappeared. Good timing if you ask me!

Last night, I prepared a bowl of overnight oats that I will definitely be making again. I am rarely full after my usual bowl of overnight oats, but the combination of ingredients of these particular oats have left my taste buds and tummy feeling fully satisfied!

Super Voluminous Chocolate Protein Raspberry Overnight Oats topped with Hazelnut Butter

  • 1/2 cup rolled oats
  • 1 tbs chia seeds
  • 1 tbs coconut flour
  • 1 scoop good chocolate protein powder (I used Vega One Chocolate)
  • 3/4 cup of non-dairy milk (I used unsweetened chocolate almond milk)
  • 1/2 ripe banana
  • 1/4 cup raspberries

I always try and keep a bag of frozen bananas in my freezer -SO convenient!

For these oats I used 1/2 of a frozen banana and frozen raspberries:

And microwaved them until they were a beautiful melty fruity mush:

Then I added the rest of the ingredients and mixed thoroughly!!!

After a full nights refrigeration – My oats were ready, delicious, AND voluminous!!

Great way to start off the morning!

Onto my yummy eats from last night:

Yesterday after work, I was tired, hungry, and conveniently happened to walk by a hugeee Whole Foods! The one I go to is about 10 times smaller.

In my grand excitement, I walked in, wandered the aisles for a bit, and decided to get some food from their hot/salad bar.

Salad with roasted eggplants, beets, peppers and balsamic vinaigrette. Tropical quinoa, baked beans, and curried tofu salad (really spicy)!!

This was really great, and exactly what I needed.

Along withΒ  a few pieces of this dessert:

88 % cocoa – Now that’s speaking my language! One of my new favorite chocolate bars!

The darker the cocoa percentage = more antioxidants = more health benefits = winner winner chocolate dinner!

Do you have a favorite brand/flavor of dark chocolate? I love trying new brands and flavors!

Peace, love, and chocolate –

Ellie
