How’d You Get So Smooth!?

Hey there!

It’s that day again, Monday!

And let me tell ya, I do not mind one bit!

Why, you ask?

Because of this:

The creamiest…

Most dreamiest…

Smoothiest… Smoothie EVER!

Now I know exactly why they are called SMOOTHies….

That smoothie may not look like much- but, it’s much!

Secret ingredient?!

Hint: It’s green!

And no, it’s not spinach!

Rymes with “mavocado” –

Yep, that’s right! There’s avocado in this baby!

I have been reading a few blogs that have posted smoothie recipes with avocado in them, and I decided that I just had to try it for myself!

In the mix:

  • 1 scoop vanilla protein powder
  • 1 tbs coconut flour
  • 1/2 of a small avocado
  • 1/2 frozen banana
  • 1 scoop almond milk yogurt
  • 1 cup unsweetened vanilla almond milk

And blend away!

What took it over the top was:

The blueberry muffin i crumbled over the top.

I highly recommend trying avocado in your smoothie if you haven’t!

Avocados are filled with healthy fats (which are highly benefecial!) And boat loads of potassium! (more than bananas!)

Plus they taste delicious…

You can EVEN put them on your face!

And let me tell you all, I thoroughly enjoy putting food on my face!

Monday Mishaps…Onesie Wonders

Well, hello! Glad to see you stopped by!

So you know how I usually get REALLY excited and enthusiastic about all the yummy food I make?!? (In all complete modesty of course)…

Well, today will not be one of those days.

I have a screw missing in my brain this Monday… My breakfast, and my gluten free baking attempt…both sucked.

You win some you lose some, right?

Enter my failed breakfast:

Breakfast cookie topped with cinnamon and coconut butter. Mixed berry "green" smoothie.

My breakfast cookie this morning tasted off… I didn’t add the almond milk like I usually do – which resulted in a sticky/gooey texture not super pleasing to the palate. And my dark purple brown smoothie- looks delish, huh? Yeah, that was off as well – I made it with the pumpkin seed protein powder, and didn’t put a frozen banana, which just made it taste very “earthy”… Not the best folks, not the best.

You know what else was not the best? This gluten free/ vegan refined sugar free cinnamon raisin bread I tried to make this morning.

I followed a recipe for a normal gluten free bread for the proportions, but I went wild with the vegan, cinnamon, and raisin aspect of this bread. My wild side didn’t completely pay off… This wasn’t a complete failure… Texture wise it’s pretty alright, taste wise, not what I was going for.

You know the smell of freshly toasted:

That’s what I was going for – THAT smell, and a similar taste…

I got this instead:

Not THAT smell, and not THAT similar taste…

I will definitely try making a healthier version of the cinnamon swirl bread we all know and love, but this time I may try and swallow my pride and follow a recipe… Ain’t nothin’ wrong with a little direction!

If that second baking attempt doesn’t go as planned… I may just leave the bread baking to the experts.

But hey! At the end of the day (or the beginning- it’s still the morning), I am not complaining…I mean, what fun would it be if all cooking adventures resulted in pure amazingness?! Not that fun at all….Failed attempts make you really appreciate and excited for the successful attempts (and when I say “you” I mean me).

A Food Network Experience: Triple D’s Style!

Hey there!

In order to celebrate my roommates birthday yesterday, she suggested we go here:

As soon as I Googled Jethro’s Fine Grub and found out it appeared on Diners Drive Ins and Dives, I was totally in! (to view the you tube clip from Jethro’s on Triple D’s click here)

I am a HUGE Food Network fan, and anything having to do with the food network gets me pumped!

So I was PUMPED to go here!

After about a half of an hour wait outside (the place is absolutely tiny & busy)… and another 30 minute wait for our food..


The birthday girl had to go big or go home, and big she went!

Do you see the size of those things????!!! They took up half of the table!!!

I was definitely neither game nor hungry enough to get their “pancakes”

So I opted for a veg friendly option appropriately named:

Got it without the rice though.

It was delicious!! Loved the green curry sauce and apple fennel slaw!!

I ended up ditching about 3/4 of the tortilla portion because it was just too much tortilla for me! I dumped the rest of the filling on the salad greens and gobbled it up! YUM-Y!

Brenna did pretty well with her pancakes considering the size..

You know that pancake portion size is OUT OF CONTROL when…

  1. Basically everyone whips out their camera phones to take a picture as soon as their pancakes arrive…
  2. They take up most of the table… and
  3. You need… not one, but TWO take home containers for left overs!

This just makes me laugh... I am STILL stunned at the size of those cakes!

All in all, I had a great time and great experience doing my Diners Drive Ins and Dives thang! Happy Birthday to Brenna!! Thanks for taking me here 🙂

Woot Woot!

Has anyone else been to a place featured on Triple D’s? If so.. How was it?!?!

Today is going to be another study filled day!! Really looking forward to it!!!

not… 😉

But first, I’m going to take some of this energy out at the gym!

I just fueled up with a nice breakfast:

Chocolate Hazelnut Smoothie: 1/2 frozen banana, 3/4 scoop chocolate protein powder, a bit of cacao powder, 3/4 cup non dairy milk, 1 tbs hazelnut butter. Along with a triple threat Banana Nut Blueberry Muffin!

I couldn’t wait to take a sip and a bite before the pic was taken – ’twas a hungry morning!

Lip Smackin’ Study Snackin’

It breaks my heart a little that I’ll have to limit my time in the kitchen for the next couple of weeks….

Classes are officially over for the term. Now I’ve got to spend time studying for finals!

Here are some of my favorite/easy/ healthy/portable study snacks:

I know I’m not the only one that’s got to get their study snackin’ on! These are some ideas for YOU too 😉

Apples sprinkled with cinnamon dipped in nut/seed butter! (this happens to be a combo of almond butter and sunflower seed butter)

Just squeeze some lemon juice on the apples to prevent browning and you're good to go!

Any fruit dipped with nut butter! (a chickpea accidentally fell into the nut butter) woops!

These are great frozen!

Protein Smoothies!

Veggies and crackers dipped with hummus! I just made this hummus this morning! IT'S DA BOMB! Avocado hummus - this recipe!

That's what I call a portable healthy snack!

Oatmeal in a jar! Just screw the lid on tight and throw in your backpack! Yummy study snack/meal!

Dark chocolate and trail mix..

And last but not least:

Tea, tea, tea, and more tea!

Triple Threat Banana Nut Blueberry Muffin Bliss (Gluten Free, Refined Sugar Free, and Vegan)

Hey there beautiful people!

Have I got a special post for you today!

Last night, I went on a little baking adventure in my kitchen… and it lead me to muffin heaven!

My very first attempt at vegan and gluten free muffin baking was quite successful if I may say so myself! I think you may want to make these ASAP!

Banana Nut Blueberry Muffin Bliss (Gluten Free, Refined Sugar Free, and Vegan)

Yield: 12 muffins


  • 2 ripe mashed bananas (I used frozen ones and microwaved them until soft!)
  • 1 ¼ cup Gluten Free All Purpose Flour (I used Bob’s Red Mill)
  •  ¾ cup Almond Meal/Flour
  •  1 cup blueberries (fresh or frozen)
  •  3 TBS ground flax seeds (for flax egg)
  •  5 prunes
  •  9 TBS. unsweetened almond milk
  •  1/3 cup chopped walnuts
  • ¼ cup melted extra virgin coconut oil
  •  1 TBS. vanilla extract
  •  ½ tsp. salt
  • 1 tsp baking soda
  •  1 tsp baking powder
  • maple syrup (optional)


  1. Preheat oven to 350 degrees.
  2. Make flax egg mixture: Blend the almond milk and prunes together until smooth. Add the almond milk mixture with the flax into a small bowl. Stir and let sit while preparing other ingredients.

    The flax egg mixture should look a little like this!

  3. Combine the gluten free flour, almond meal, baking soda, baking powder, and salt into a large mixing bowl.
  4. Add bananas, vanilla extract, and flax egg into the mixture. Stir well!
  5. Finally, fold in the walnuts and blueberries into the mix.
  6. Scoop batter into a 12 muffin tin pan, and drizzle ½ tsp of maple syrup over each muffin.
  7. Bake at 350 degrees for 20-25 minutes (or until a toothpick/knife comes out clean) Remove and let cool –

Although they are healthy, they really do taste amazing!

My roommates totally approved and thought they were delicious. They were impressed!

My dinner last night consisted of:

I’d say it was a pretty productive evening last night though!

I even had time to paint my nails! (They are getting a little longer 🙂 )

I succumbed to that “trendy” different color ring finger nail. I actually like it! Don’t know where that came from though… why paint one of your nails differently? Anyone know?!?

After a productive evening of baking and nail finger painting, this morning I had some more muffin!

Topped with almond butter! On the side: a blueberry smoothie!

If I keep eating so many blueberries I may end up like this:

Love that movie!!!

Now I am fully fullified from my breakfast!

Just sipping on some delicious tea from David’s Tea:

I forgot how good this tea was!!! I am usually “too lazy” to make loose leaf tea…so I usually just go straight for the bagged tea… But this morning, I was feeling adventurous, I decided to take the extra .2 seconds and brew some Alpine Punch! Totally worth it!!!

It’s Friday Night, and I Just Got Paid!


How’s everyone’s Friday going?!? Good I hope!

Since my refrigerator is officially empty, this morning’s breakfast had to be a good ol’ simple green smoothie with granola!

These never disappoint!

  • 1/2 frozen banana
  • 1tbs coconut flour
  • 1tbs chia seeds
  • 1tbs sunbutter
  • 1 scoop vanilla protein powder
  • Spinach!
  • 1 cup non-dairy milk

Yum yum yum, in my Tum!

I also had a really yummy green smoothie last night with din din!

Can’t get enough of the green stuff! I added a little peppermint extract to make it minty!

My dinner was really good and very easy to make!! It was Quinoa a la Italiano!

I cooked:

  • 1 cup quinoa in..
  • 1 (15 oz.) can unsalted diced tomatoes and 1/2 cup water and added
  • Some basil, Italian Seasoning, Garlic Powder and salt
  • Let it all cook up then added spinach and kalamata olives at the end!

The quinoa cooked in the tomatoes is really good!

To cook quinoa,  add the quinoa and liquids into a pot, let it boil, then cover and simmer for 15 to 20 minutes!

I saw this photo posted on facebook and I could definitely relate!

I tend to get a little on edge when I’m hungry! I’m like a ticking time bomb, If I don’t get food in my tummy then I feel like all h.e. double hockey sticks (LL) will break loose.. Who else is with me?!?

But as soon as I’m fed, I’m back in action!!
