Gibelotte

Gibelotte pronounced “jjjjjeeblut” (j sound like you would say Raj – you know, from the big bang theory) is a French word meaning rabbit stew with white wine.

But this post has nothing to do with rabbits, or white wine…(Unfortunate about the wine part πŸ˜‰ I know)

The reason I call this post Gibelotte is because my mom uses the term when she just throws whatever is in the fridge in a pan and cooks it! This is what she calls a Gibelotte, not rabbit stew. She has never made rabbit stew in her life (thank goodness!) In fact, I didn’t even know a gibelotte was a rabbit stew until today! Learn somethin’ new everyday!

She is French Canadian, so maybe it’s a French term turned Quebecois slang,

Anyways, I was almost out of food the other day so I made my own “Gibelotte”…

I was pretty pleased, it turned out quite delicious!

Sauteed onions, mushrooms,frozen peas, and carrots.

Incomplete without some savory trail mix and ketchup on top of course!

I make what my mother calls “gibelottes” quite often. Salad gibelottes, stir fry gibelottes, smoothie gibelottes… It’s a great way to use up the last of your groceries. They all usually taste pretty good! (provided you don’t combine two completely wacky ingredients together)

Chocolate Mushroom Stir Fry Anyone? Sauteed Onion Smoothie?!… You get where I’m going.

Earth Day Bearthday!

Happy Earth Day everyone!

I’d just like to take a moment and give a great big hug to this wonderful planet of ours.

I realize this sounds cliche, but it should be:

I love our planet, and I sometimes worry about our future generations and the earthly problems that they will have to deal with. But anyways, I won’t get political here…

Let’s talk cleaning!

I found this great website with all the recipes to make natural cleaners for basically anything! I thought it was great!! You should check it out!

All you really need is:

  • Baking Soda
  • Vinegar
  • Hydrogen Peroxide
  • All Natural Tea Tree Oil And Grapefruit Oil (which have known antibacterial properties) And Lemon Juice
  • Liquid Castile Soap

To make:

Surface Spray, All Purpose Liquid Cleaner,All Purpose Abrasive Cleaner, Refrigerator Cleaner, Oven Cleaner, Microwave Cleaner, Dishwasher Detergent, Gorgeously Green All-Purpose Spray, Fruit and Vegetable Wash, Drain Cleaner, Window, Glass and Chrome Cleaner, Toilet Bowl Cleaners, Scrub with a toilet brush, Tub And Tile Cleaner, Soft Scrub for Fixtures, Mildew/Germ Killer, Mildew/Germ Killer 2, Wood Floor Cleaner, Linoleum Floor Cleaner, Carpet Stain Remover, Carpet Deodorizer, All-Purpose Carpet Cleaner, Air Freshener, Furniture Polish, Metal Polish (copper and brass), Powdered Laundry Detergent, Liquid Laundry Detergent, Laundry Pre-treatment, Fabric Softener, Bleach Alternative (Laundry)………….

Anywho, you get the point! Pretty much any type of cleaner you can image can be made easily at a low cost to you and the environment! WIN.

I love using fruit and vegetable wash, but it’s quite expensive, so when I run out, I will salvage the bottle and make my own πŸ™‚

I want to try and make it a point to make natural cleaners! For me, there’s no excuse not too!

They were voted green company of the year in 2011!!

I’ll support that – ESPECIALLY if it involves wine πŸ™‚

Now let’s chat about recycling. Just a casual little chat…

I’m really happy that my roommates and I recycle and all, buttt, we seem to have trouble with the TAKING OUT part of recycling.

Although this photo goes up with embarrassment, THIS is our balcony.


Yes, you see that right, it is FULL of recycling. To the point of ridiculousness!

We may need to be on the show HOARDERS soon.

To be fair, I have 5 roommates (so it piles up very fast!)…and we have all been very busy with exams and studying. There is no excuse though. I think now that the recycle pile has gotten THIS BIG, no one is willing to tackle the project on their own.

Roommates unite- recycle we will conquer thee once and for all.

Wining and Dining!

Hey there!

How was everyone’s weekend? Did you have some good food like I did?!

My Dad was in town from Montreal, so he treated me to a weekend of wonderful meals and wine πŸ™‚

On Friday night, we went to a place called Section 3.

It was pretty loud, since there was a Canucks game going on… But we managed to raise our voices enough octaves to hear each other!

The food was delicious! I had the best yam fries. EVER!

The Ultimate Veggie Burger: Whole Wheat Bun, Alfalfa Sprouts, Cucumber, Avocado, Sauteed Onions and Mushrooms. SO good! But the yam fries were definitely the best part!

I also had a taste of my dad’s starter salad, which I will have to recreate, because the flavor combos were ah-mazing!

Avocado, Mango, Roasted Red Peppers, Orange, and Jicama. I forgot what the dressing was... But it worked!!

Along with a couple of glasses of wine, I was feeling in a celebratory mood, so I got a mojito topped with champagne! MMM! Though, what made this drink great, was the stir stick that came along with it!

Haha how funny is that?!?

Dinner was wonderful, and my Dad and boyfriend got along very well! Winner!

On Saturday, my dad and I made a little day trip to whistler for lunch. It was a beautiful day!

We had lunch at La Bocca.

I had:

Peppermint Tea

Good Karma Wok- This was good! ALOT of tofu (almost too much!) I couldn't finish all the noodles either, but the Thai coconut curry sauce was wonderful! (not too spicy)

And my dad had:

Sesame Tenderloin Wok

The views on the way back to Vancouver from Whistler were absolutely incredible! The weather was so sunny!

For dinner that night, we went to one of my favorite restaurants… The Sandbar on Granville Island.

This was a night of indulgence!… Which is okay once in a while, ya know?!

To start, we had wine:

Malbec.

What an incredible backdrop… I’m a lucky gal. Vancouver is such a beautiful city!

Then came our appetizer:

The Sand Barge: prawns, oysters, crab

For our main dishes, I had:

Sandbar Big Salad: mixed greens, tomatoes, beets, cucumbers, Kalamata olives,edamame, sherry vinaigrette - topped with grilled salmon.

My dad had:

Arctic Char with fried rice and veggies.

For dessert:

A little dessert wine! - very sweet, but tasty!

Lemon tart - I was so full by this time, I had a small bite to taste, really yummy!

Assorted cheese plate- I rarely eat cheese, but I had a couple bites because my dad insisted that cheese and dessert wine together go in perfect harmony... Ha, yeah, they tasted pretty harmonious!

After a wonderful day of great food, views, and conversation, we called it a night!

Thanks Dad for spoiling me and treating me to wonderful meals!!!

I love going out to eat, but I have to say, I’m excited to get back to the kitchen and start cooking again! (a day and a half without cooking…it’s a stretch I know πŸ˜‰ !)

Foods That Intrigue!

Good Morning Y’all!

Here are some foods that INTRIGUE me…

I was at whole foods the other day and saw this:

I’ll pass on the bacon salt… But the Chocolate, Cinnamon & Chipotle Salt, Curry Salt, and Vanilla Salt – I’d LOVE to try!!

Cabernet Sauvignon Salt!?!?! YES PLEASE!

These are a bit out of my price range, but once I make my first million, these salts will be on top of my purchase list…Along with:

Oh EM GEE! Both of these spreads sound AMAZING! Ever since I saw a blog review of these two rawtella products, I have not been able to stop thinking about them! I must try these some day!!

Lastly, I saw this product the other day on the Almond Breeze Website:

I absolutely must must try these! Almond Milk AND Coconut Milk Combined?!?!?! TWO great non-dairy milks having a baby?!?! What could possibly be bad about that?! MUST TRY!!!

On to other news,

I have my first final today @ 3:30… Feeling pretty prepared! Although, I’ll definitely do a little bit more reviewing before!

To prepare my brain this morning for another day of studying and test taking, I started out the morning with some BRAIN FOOD! REALLY REALLY GOOD brain food!

Banana Blueberry Oatmeal topped with Sun-butter

I forgot how AMAZING hot oatmeal is… I was on the overnight oats train for so long that I neglected to visit my good friend hot oatmeal. This was really delicious. Here’s the recipe!

Ingredients:

  • 1/2 cup rolled oats
  • 3/4 water
  • 1/4 non-dairy milk
  • 1/2 ripe banana
  • 1/2 cup frozen blueberries
  • 1 tbs chia seeds

Procedure:

  1. Combine the rolled oats and water in a pot on the stove top on medium-high heat.
  2. Stir, Stir, Stir- then add in the mashed banana and chia seeds.
  3. Stir, Stir, Stir, – then add in the blueberries and 1/4 cup of milk.
  4. Stir until warm and cooked!
  5. Top with nut/seed butter of choice!

Great Brain Food: Blueberries, oatmeal, nuts and seeds!

I’m passing my exam thanks to this breakfast πŸ˜‰

You’re SO Granola! and…Rock Chalk!!!!

Yesterday, I had a paper to write, laundry to do, and a nap to postpone.

Well,

I didn’t end up postponing my nap, I headed straight to bed and passed out for about two hours. From 7 to 9p.m. – It was much needed and I felt super energized afterwards! (Although I always am a bit thrown off when I fall asleep while the sun is out and wake up to the darkness of the night)

My nap gave me the motivation to do laundry, and finish my paper procrastinate!

When I want to procrastinate while still feeling semi-useful – I cook! We all need to eat, right?!?

I made granola instead of writing my paper… πŸ™‚

I never really fully understood why people used the term “granola” to describe those who eat super healthy and “hippie”esque… Saying “granola” almost as if it was an insult… NEWS FLASH: granola is amazing!! Especially home-made granola!!

Just watch out! Not all granola is healthy! – a lot of store bought brands have a TON of added sugar and sketchy oils (so read the ingredients carefully!) When I buy granola (which is rare).. I make sure there are minimal ingredients, and that it’s sweetened with a natural sweetener, such as agave nectar or maple syrup.

My favorite so far is this brand!

Before making my Apple Cinnamon Hemp Seed Quinoa Granola, I made apple chips first! So easy and so yummy!

All you need is: 2 1/2 smallish apples (I used Granny Smith, and Cinnamon!)

– I had to repeat this process twice (not all the apple slices will fit onto the baking sheets) Unless of course, you own a HUGE oven and a HUGE baking sheet… (if so, I’m jealous!)

1) Preheat oven to 200 degrees F.

2) Slice the apples as thin as you can and spread them onto baking sheets lined with aluminum…

3) Sprinkle liberally with cinnamon (both sides)…

4) Place in the oven, leaving a small opening to let the moisture out – I used a spoon to keep a small crack in the door.

5) Finally, bake for about 1 – 1 1/2 hours (until crispy)!

After I made these amazing and easy apple chips, onto the granola I went!!

APPLE CINNAMON HEMP SEED QUINOA GRANOLA

I had the idea of putting hemp seeds in them because yesterday I went to Whole Foods ( just to pick up a couple things) and looked through this pamphlet:

And read about how great they are for you! (Filled with tons of protein!)

Don't get too excited!!...."don't expect a high from the Cannabis sativa plant, which contain virtually no THC."

Here are the healthy, nutritious and delicious ingredients for my

APPLE CINNAMON HEMP SEED QUINOA GRANOLA (inspired by this recipe)

  • 1 1/2 cup rolled oats
  • 1/3 cup uncooked quinoa
  • 3/4 cup hemp seed (add in the hemp seeds AFTER baking – this is very important because when hemp seeds are heated the good fats turn into trans fats… a.k.a BAD fats!)
  • 3/4 raw almonds, (chopped or sliced)
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw walnuts, chopped
  • 1/4 cup shredded unsweetened coconut
  • 1/3 cup sultana raisins
  • 1/4 cup maple syrup
  • 1/4 cup melted extra virgin coconut oil
  • 2 1/2 tsp cinnamon
  • About 3 cups of the cinnamon apple chips (add these in after baking!)

Procedure:

  1. Preaheat oven to 225 degree.
  2. Combine the dry ingredients (except for the apple chips and hemp seeds) with the wet ingredients in a large bowl.
  3. Stir well – coating all the granola with the maple syrup and coconut oil.
  4. Spread onto baking sheets lined with parchment paper or aluminum foil.
  5. Bake for 1 1/2 hours (or until golden brown).
  6. Once the granola is baked, add in the hemp seeds and crumbled apple chips.
  7. Voila! YUMMY/ Healthy, granola! (alot less expensive than buying it too!)

This Granola is AMAZING! And this recipe made LOTS!!

This morning, I used the leftover apple slices to make an Apple Cinnamon Peanut Flour Oatmeal topped with the wonderful granola!!

SUCH yummy eats!

And with my tummy full, I was able to FINISH MY PAPER!! WOOOOO!

And now… I’m ready to watch the big game tonight!!

Mousse Pudding Party! You’re all invited!

Sorry to disappoint- this is far from a party…But you are invited to make the yummy mousse pudding recipe I posted!

But first, BREAKFAST!

This morning was a two breakfast kind of morning-

My first breakfast:

Didn't quite fill me up!

Peanut Butter Chocolate Smoothie Bowl

  • 1/2 frozen banana
  • 3/4 scoop chocolate protein powder
  • 1 1/2 tbs. peanut flour
  • 1/2 c. canned lite coconut milk
  • 1/2 c. non-dairy milk

All blended together! Topped with puffed rice/flax/quinoa cereal and some granola.

After devouring this delicious smoothie/cereal concoction. My tummy was still grumblinggg! It needed more food.

So for my second breakfast:

Frozen berries, rolled oats, and hemp milk- with almond butter on top!

I ended up microwaving this to de-frost those oh-so frozen berries.

After these two breakfasts, not gonna lie, still a little hungry- but I restrained myself from going back for thirds, didn’t want to over breakfast-ify myself, if you know what I’m sayin’!

Good news!

The boyfriend really liked the dessert!!

What dessert?

This dessert:

Chocolate Hazelnut Pudding Mousse

Tried to make it look "fancy" with the wine glasses!

I was honestly pretty proud of myself- My first attempt at making this pudding mousse turned out pretty great! (Not to toot my own horn or anything)

It tastes great and is pretty healthy too!! Double whammy!

Plus…it’s super easy to make and takes virtually no time!!!! Quadruple whammy!!

Ingredients:

  • 1 package lite silken tofu (firm)
  • 30 grams melted dark chocolate bar (melted using the double boiler method)
  • 2 tbs. unsweetened cacao powder
  • 3tbs hazelnut butter
  • 5 tbs lite canned coconut milk
  • 3 tbs maple syrup (you can add more if you like- for me this was the right amount of sweetness but could definitely be sweeter)

Blend all the ingredients together until it’s a smooth texture! Place in bowls and refrigerate for a couple of hours!

Garnish with some shaved chocolate and crushed hazelnuts!

Dessert in wine glasses, wine in wine glasses: Perfect Night!

Since I had some left over coconut milk from making these desserts yesterday – I made a delicious curry sauce which I drenched over roasted butternut squash, kale and quinoa!

Butternut squash, kale, and quinoa curry...So GOOD!

First I baked the butternut squash. I peeled the butternut squash, cut it in half, scooped out the seeds, and cut them up into cubes.

I coated them with 1 tbs. of coconut oil and some salt and pepper – and baked at 350 degrees for 40 minutes or so. Turning the squash a few times in between.

My first time baking butternut squash- I am now obsessed! I bet you some nut butter would be really good as a little saucy topping for these! I'll try that!

While cooking the quinoa, I heated the frozen kale and made the curry sauce.

For the sauce:

  • 1/2 cup lite coconut milk
  • 1/2 cup coconut water
  • 1 tsp curry powder
  • 1 tsp toasted sesame oil
  • 1 tsp garlic powder
  • 1 1/2 tsp of a thickener (like cornstarch) I used arrowroot powder
  • Tobasco sauce (as much as you like!)
  • Salt (to taste)

Heat up all the ingredients into a sauce pan until it’s nice, creamy, and delicious. Top the quinoa, kale, and butternut squash with the saucy sauce!

So happy I have left overs!!!

Speaking of happy – I opened a yogi tea bag the other day with a saying that I didn’t quite agree with:

Does this mean we have to serve other people in order to be happy? What happened to serving yourself first?

I may be completely interpreting this the wrong way, so please enlighten me if you have better ideas of what this means.

Something to ‘Doat’ Upon….

Yesterday evening I was greeted by a handsome face along with this beautiful surprise:

Flowers like these deserve my best vase, or as I like to pronounce it “Vawze”: sophisticated, right?

Dinner was very delicious, especially accompanied by a bottle of this:

Consumed in my favorite wine glass –

Needless to say, I was mildly hungover this morning, so I needed a hamburger hangover helper breakfast.

Steal cut oats made with: 1/2 mashed banana, 1 cup almond milk, 1tbs chia seeds, and some cinnamon.

Topped with fresh strawberries and chocolate protein drizzle (1/2 scoop protein powder, 1 tbs cacao powder, and H to the 2 to the O)

What’s a hangover helpin’ breakfast without some chlorophyll infused water!

So why is chlorophyll so great?

Here are the health benefits of chlorophyll:

  • Anti Carcinogenic
  • Antioxidant & Anti-inflammatory
  • Chelation of Heavy MetalsΒ  (definitely had to look up the meaning of chelation. Not a word I use on a daily basis…or ever for that matter.)

Pretty incredible, eh?
