Meet My New Love, Mason.

Oh Mason, how I love thee.

The things I can say about Mason..

Jar that is.

I have a new found love for mason jars!

I have always loved jars of any kind, but there is just something so appealing about mason jars. They’re so retro, yet so chique, yet country… All at once! That’s versatility if you ask me!

Because everyone is moving out, we had this “stuff swap” room in my residence, where people bring clothes/books/stuff that they don’t want or need anymore. Whatever is in the room is basically a free for all!

Among a few other things, I found some lovely mason jars!

After a thorough washing- they were ready to go!

I’d like to introduce you to:

Steel Cut Oatie, a single bachelor looking for a companion…

And also, meet:

Rolled Oata, a bacheloroatte in search for a perfect partner…

Well, whaddaya know… One day, Rolled Oata and Steel Cut Oaty crossed paths and hit it off!

Now they live happily ever after in their humble pantry, creating beautiful children breakfasts almost every morning.

Such as this baby here:

Chocolate Peanut Butter Banana Overnight Steel Cut AND Rolled Oats

Rolled oats combined with steel cut oats in overnight oat recipes create the perfect texture bound bowl of flavor infused breakfasts.

It’s my new favoroat combo!

In the mix for one serving: 1/4 rolled oats + 1/8 cup steel cut oats.

Try it, you’ll like it! Trust me, I know what I’m talking aboat.

Back to jars… Another nut butter jar bites the dust!

Bye bye hazelnut butter, it was nice knowing eating you! Till we meat again!

I don’t know if you recall me saying that I would gladly take on the challenge of trying to finish all my nut/seed butters before my big move… Well, I’ve been doing pretty well!

I don’t know if it’s something to be proud of that I’ve conquered almost all of my butters…

But, not gonna lie, I’m pretty proud!

Although, I do REALLY miss Almond Butter, it has been weeks since I’ve had any, and I CANNOT wait to go get some more! After I finish the cashew butter I will!

Out of all my nut/seed butter experiences, I have had the hardest time getting through the pretty small jar of cashew butter! I like cashews, but in butter form, it just isn’t my favorite! If I go buy almond butter or peanut butter before I finish the cashew butter…then I don’t know if I’ll ever finish it. And I. Must. Finish. It.

If I had to choose three butters that are a definite win and pantry/fridge essential in my book, they would be:

  1. This almond butter
  2. Organic creamy peanut butter
  3. Sunbutter
  4. Coconut Butter (Okay I had to choose four…couldn’t decide!)

Some other butters that I’m curious to try are Pecan Butter and Pumpkin Seed Butter!

Okay so enough with this butter jargon!

You’re SO stacked…

I’m talking about the pancakes I had this morning, of course!

After taking a second look in my Earth Balance tub, I realized it was moldy. I got scared, quickly removed the “butter” and doused the pancakes in a peanut butter chocolate sauce instead.

Much better! No mold-induced illness in my future!

I used this pancake recipe (using the flax egg and substituting some of the chickpea flour for protein powder) – These were REALLY delicious. And wow – the batter made so much!!

You can bet I licked my plate clean.

Seriously, I did… (I only do this when I’m in the company of myself…. Or people I’m super comfortable with 😉 )

No worries, I won’t embarrass you in public… No public plate licking for moi!

One of the MAIN reasons I made pancakes (besides the fact that they taste real good) is that I recently got an amazing pancake flipping spatula that I couldn’t wait to put to use!!

It’s as big as my face!!!

It’s so clear to me now.. that veggie burgers and yam fries are a winning combination!

Subject change:

Yesterday, I just had this powerful URGE to color. The coloring/drawing I used to do back in elementary school.

I followed my urge, whipped out these babies:

And started to draw… for a good hour and a half or so.

I felt like a kid again, it was wonderful 🙂

I hope the recipients like their home-made colored pencil drawn cards!!

I am feeling so giddy lately – maybe it’s a little summer fever?!?

Makes me want to wear my favorite elephant-patterned dress EVERYDAY!

And paint my nails pink and sparkly!

Life is just great at the moment and I’m so thankful.

Just Beet It…


Now I know Michael Jackson was not talking about these kind of beets when singing this song:

But that’s the song that inspired me to buy beets. See, yesterday at the super market… I was listening to my ipod while walking down the aisles, and as “Beat it” by MJ started playing on my shuffle list, I happened to walk right by the beets and thought to myself “WOAH, this is a sign! – I have to buy beets!!”

I should be a fiction writer… I wish that was the actual story of why I was inspired to buy beets. It is far more exciting than the real story: I was walking down the aisle and saw beets and thought to myself “I like beets, I never buy beets, I think I’ll buy beets today…” So I bought beets! (exciting, eh?)

Not only did I buy beets, I decided to buy red AND gold beets.

Just like “the king of pop,” to me, it doesn’t matter if you’re black or your white my beats are yellow or red.

Here is the recipe for the salad I made with these beets – If you’re not already sick of reading about beets 😉

Cilantro Lime Golden and Red Beet Salad


For the salad:

  • 2 large golden beets (cooked and chopped into cubes)
  • 3 small red beets (cooked and chopped into cubes)
  • 1/4 cup chopped cilantro
  • 1/4 cup (overflowing) diced onion
  • 1/8 tsp. salt
  • pepper (to taste)
  • + 1/4 chopped walnuts (forgot to add walnuts to the pic)

For the dressing:

  • Juice of two small/medium limes
  • 1 tbs olive oil
  • 1/4 – 1/2 tbs maple suryp (depending on the sweetness level you like)
  • 1/4 tsp chili powder


  1. First, I roasted the beets in the oven at 350 degrees for about an hour.
  2. Then, I peeled the beets and chopped them up.
  3. Put all the salad ingredients into a medium sized mixing bowl.
  4.  Combine the dressing ingredients into a small bowl, mix well, the dump on the salad.
  5. Mix, mix, mix, and voila!

A fiesta beet salad! AREEEEEBAA!

OKAY, enough about beets! Let’s move on to breakfast!

My breakfast pizza yesterday was SO good, that I just had to make another for breakfast this morning. THIS one was even better!

Peanut Butter Banana Chocolate Breakfast Pizza

For the crust: Brown rice tortilla wrap.

For the sauce: 3/4 scoop vanilla protein powder + 1 tbs peanut butter + almond milk + stevia

Toppings: 1/2 banana, cacao nibs, cinnamon, and coconut shreds.

After spending about 8 minutes in the oven @ 350 degrees. I added chocolate drizzle over the top. Which took this pizza OVER THE TOP!

The chocolate drizzle was 1 tbs unsweetened cacao powder + a few drops liquid stevia + some almond milk.

GOSH, I want some more!

I’m happy to tell you all that I think that both my finals went very well! I’m feeling pretty confident! Happy that they are over with for now – my next and last one is the 21st of April – So I still have plenty of time to study procrastinate!

I have SO much laundry to do today… I always dread laundry day, but once I actually do it all, I realize that it’s really not that bad…! Right?!

My dad, boyfriend, and I are going out to dinner tonight! I’m really excited to see both of these handsome gents! It’s been too long!

Plus, love it when the dad is in town 🙂 Yummy, FREE food! ( free for me at least 😉 )

Breakfast Chocolate Almond Mousse?!? YES PLEASE! + Non-dairy yogurt face off!

Hey all!

Look at that sunshine blazing through my window!! A lovely morning it is…

As I mentioned in yesterday’s post, yesterday afternoon I went to the lovely market with my boyfriend. I LOVE going to the market! How lucky I feel to live so close! It’s one of my favorite places!

I just love all the fresh fruit available- Look at those ginormous grapes!!!

Fighting the temptation to buy all the gourmet chocolates and dessert was difficult, although made easier by our limited pocket cash!

Next time though, I am getting the FRESH pasta they had – Wow did it look amazing! Nothing beats fresh pasta!

We ended up picking up some baby carrots, rosemary, garlic, and a couple filets of fresh lemon ginger marinated white fish (I completely forgot what kind of fish it was) WOOPS!

Oh and we also wanted to get a little “freaky” at the market and pick up a new to us vegetable…

Enter: Purple Potatoes!

They were great! Plus, I learned they are packed with antioxidants due to their rich purple color!

We roasted them with the baby carrots, garlic, rosemary, and a little olive oil! DE-LISH!

The final product:

+ a green salad on the side (with some hummus!)

This was a really delicious dinner. I absolutely loved the idea of going to pick up a few ingredients and using them right away to prepare our meal…It’s great!

Now, onto my Chocolate Almond Protein Breakfast Mousse!

The reason I call it a “breakfast mousse” is because it is super filling, healthy, and packed with protein! This really keeps me full for a good while!

I have been enjoying making this deliciously easy mousse the past couple of days.

You see, I LOVE the texture of yogurt. But my lactose intolerance limits the yogurt I can have. My only options are non dairy yogurts. Though I really am not a fan of SOY yogurt at all – It is wayyy to0 sugary and cardboard tasting for my liking!

I recently discovered two new yogurt options though!

Cultured coconut milk yogurt, and cultured almond milk yogurt.

I love both of them. But they both have their pros and cons!

Cultured coconut milk yogurt:


  • Tastes delicious
  • Smooth texture
  • Good source of fiber
  • Great source of magnesium, calcium, and Vitamin B12


  • Added cane sugar
  • VERY thick
  • Not much protein

Cultured almond milk yogurt:


  • Natural sugar from fruit juice concentrate
  • 3 g. protein per serving
  • Taste is good
  • Most authentic to dairy yogurt (in my opinion)
  • Contains probiotics
  • Great source of calcium


  • Lumpy texture
  • Not much fiber compared to coconut milk yogurt
  • Not as much protein as dairy yogurt

In summary, both of these options are great! I prefer the almond milk yogurt though just for the fact that its added sugars are from natural sources and that the texture is more “yogurt” like. I prefer to use these with recipes, like the one you will see below – to add some more protein and nutritional value!

So here it is is folks!


(Soy free, Vegan, Gluten Free, Delicious)


  • ¾ cup plain cultured almond yogurt (cultured coconut yogurt would probably work as well)
  • ¼ cup unsweetened almond milk (or a little more – as needed)
  • ¾ of a scoop of good tasting chocolate protein powder (I used Vega One Chocolate)
  • 1 tbs. smooth almond butter
  • 1 tbs. unsweetened cacao powder


  1. Mix all the ingredients into a bowl. Stirring for a couple of minutes so all the ingredients are well mixed together and smooth!
  2. Enjoy right away, or refrigerate for a couple of hours for a more “mousse-y” texture!

Enjoyed as a snack, breakfast, dessert, and even a frozen treat!

BONUS – You can scoop this mousse into and empty ice cube tray, freeze for a couple of hours, and make it into individual mini frozen mousse bites! SO GOOD!

Get On The Saddle – Yeeehaaaw!

Why hello there! How lovely of you to have stopped by!

This morning was a pretty productive day for me!

  • Had a great breakfast!
  • I went to class (Impressive, I know)
  • I saw the “blood truck” on campus so I decided to donate some blood! (a girl fainted while I was there, slightly scary- But don’t worry, she was O.K.!)
  • I finally found a summery purse! I was walking through our student union building and there were a bunch of stands with goodies! I saw this:

And it spoke to me immediately…

“Buy meeee I’m half off!!”

Couldn’t argue with that! 😉

I might have bought a couple of super cute summer dresses as well….

Shopping = the epitome of productivity! (I wish…)

Onto my lovely scrumptiously delicious breakfast. You’ll also want to make this one. I’ve definitely been on the overnight oatmeal saddle, but let me tell ya… It’s a great saddle to be on – Yeeeehaaw!!

I made steel cut over night oats again last night. Steel cut oats are now my new rolled oats – I officially am in love with steel cut overnight oats!!

Chocolatey Chocolate Steel Cut Overnight Oats

Chocolatey Chocolate Steel Cut Overnight Oats

  • 1/4 cup steel cut oats (rolled oats would work too – just use 1/2 cup of rolled)
  • 1/2 mashed ripe banana
  • 1 1/2 tbs. unsweetened cacao powder
  • 1 tbs. chocolate protein powder (optional)
  • 1 tbs chia seeds
  • 3/4 cup non dairy milk (i used unsweetened chocolate almond milk)

* Mix all ingredients together (I like to use a jar) – and let the oats chill in the fridge overnight!

Oats joined by my left-over butternut squash cheez sause, baby carrots, and almond butter) 3's a crowd...4's a partayyy! I clearly need to do groceries though...

In the morning you’ll be greeted by some delicious chocolate greatness!

Garnish: Hazelnut butter and coconut shreds!

I just love breakfast so much! I feel like it’s the only meal of the day where it’s “okay” to have chocolate as the main course… It’s like waking up to dessert!

Since I had barely any food in my fridge, last night’s dinner used basically all that I had left – but it turned out really really yummy!

Lemony Avocado Carrot Chickpea Salad

  • 1 can chickpeas (drained)
  • 6-7 baby carrots
  • 1/4 of a red onion (chopped)
  • 1 avocado (cut into little squares)
  • Juice of one lemon
  • 1 tsp cumin
  • A bit of olive oil
  • Salt and Pepper!

*Stir all together and voila! A really quick, easy, and healthy lunch or dinner!

When I’m not eating hummus you can bet I’m eating something else with chickpeas!!

I used the left-overs for my lunch today!

I used 2 nori seaweed sheets (the kind for sushi), slightly wet them and spread them out making them overlap about an inch – then put some spinach, the chickpea salad, and mustard on top!

Rolled it up into a nice little seaweed burrito!

I love doing this with nori sheets! Eggs are really good wrapped in seaweed as well!

The seaweed gives it a great flavor! These burrito/wraps do get a little messy though! As you can tell from the fallen filling on the plate!

Not only does it taste good, seaweed is great for you!

It’s filled with iodine and iron and protein. It is also a good source of vitamin C, vitamin A, potassium, magnesium and riboflavin (B2). (source)

For lunch dessert I had:

Smal bowl of cereal with frozen raspberries and seeds on top! After this picture was taken I also covered the top with peanut flour (love the stuff)

Now I’m feeling full!

Full in my tummy!

Full of energy!

Full of determination to finish this essay I must write!

This One’s Chocolatey!

Happy Monday Everyone!!

“Happy Monday”… ha, that might be an oxymoron…

Just in time for Monday, the dark rain clouds have reappeared. Good timing if you ask me!

Last night, I prepared a bowl of overnight oats that I will definitely be making again. I am rarely full after my usual bowl of overnight oats, but the combination of ingredients of these particular oats have left my taste buds and tummy feeling fully satisfied!

Super Voluminous Chocolate Protein Raspberry Overnight Oats topped with Hazelnut Butter

  • 1/2 cup rolled oats
  • 1 tbs chia seeds
  • 1 tbs coconut flour
  • 1 scoop good chocolate protein powder (I used Vega One Chocolate)
  • 3/4 cup of non-dairy milk (I used unsweetened chocolate almond milk)
  • 1/2 ripe banana
  • 1/4 cup raspberries

I always try and keep a bag of frozen bananas in my freezer -SO convenient!

For these oats I used 1/2 of a frozen banana and frozen raspberries:

And microwaved them until they were a beautiful melty fruity mush:

Then I added the rest of the ingredients and mixed thoroughly!!!

After a full nights refrigeration – My oats were ready, delicious, AND voluminous!!

Great way to start off the morning!

Onto my yummy eats from last night:

Yesterday after work, I was tired, hungry, and conveniently happened to walk by a hugeee Whole Foods! The one I go to is about 10 times smaller.

In my grand excitement, I walked in, wandered the aisles for a bit, and decided to get some food from their hot/salad bar.

Salad with roasted eggplants, beets, peppers and balsamic vinaigrette. Tropical quinoa, baked beans, and curried tofu salad (really spicy)!!

This was really great, and exactly what I needed.

Along with  a few pieces of this dessert:

88 % cocoa – Now that’s speaking my language! One of my new favorite chocolate bars!

The darker the cocoa percentage = more antioxidants = more health benefits = winner winner chocolate dinner!

Short and Sweet… Really sweet.

Good morning all the beautiful people of the world!

It’s a beautiful day here in Vancouver!

Look at that blue sky!

This post will be short and sweet because I gotta run to work.. (bus actually) I’d hate to actually have to run to work… Arriving there all nice and sweaty. Fabulous.

What did my dinner last night and my breakfast this morning have in common?

Absolutely nothing!

Kidding… they were sort of similar in the fact that they could both be placed in the breakfast food category.

Hot apple cinnamon raisin oats with almond butter maple sauce!

Dark chocolate peanut butter smoothie cereal!

Which one was breakfast and which one was dinner you ask?

Well the oatmeal was dinner- would definitely have this for dinner every night! SO delicious!!

And the smoothie/cereal was breakfast – also very freakin’ fabulous!
