Just Like Family….Dinner

Hey there!

How are you all today?!

Today’s post is about my “just like family” dinner.

My boyfriend’s cousin, Cheryl, and her husband Terry, are so kind to frequently invite us over for dinner.

I am not blood related to them, but I feel just like a part of the family when I go there! Which I love, because all my relatives are out east (Montreal) or out mid-west (Kansas)… and when we go to Cheryl and Terry’s, it’s just like the family dinners I have at home! Lots of laughs and delicious food!

To start, we had:

A lovely salad with beets, tomatoes, goat cheese, pecans, with a balsamic vinaigrette. Really good! Love beets 🙂

For the main dish:

Grilled salmon topped with a fantastic apple mango pear raisin cranberry port relish, snow pea shoots, and toasted sesame seed adorned sushi rice! Mmmm!

Look at that presentation?!? Strategic placement of the plate too is important! (I learned 😉 )

And for dessert:

Decaf Espresso Mousse. The moussiest, most cloud - like mousse ever! So good:) The flavor brought me right back to my favorite childhood indulgence (Sheridan's Frozen Custard Esspresso Shake)! Love coffee flavored desserts!

I love how Cheryl and Terry work together as a team in the kitchen. They both love to cook which transcends in their food because it always looks and tastes absolutely delicious.

Also at dinner were Cheryl and Terry’s kids, the ever so entertaining Brooklyn (15), Wesley (17), and my boyfriend Dan’s parents, the lovely Frank and Di Anne, (who also frequently have us over for amazing just like family dinners and laughs)…

Oh and I can’t forget about the most adorable sous-chef around…

Shit Happens…

Ahhhh, the sweet sweet smell of summer break.

I’m officially DONE with exams!

4 months of intellectual freedom..

AMEN!

I seriously love the feeling of the last day of school. It feels the same now that it did back in elementary school. That giddy excited feeling.

Except now to celeberate, instead of buying ice cream cones with friends.

I buy beer.

Goodbye notecards.

Hello Sapporo.

I know I’ve got summer fever when I buy beer. I rarely buy or drink beer. But in the summer, it’s nice once in a while!

I’m more of a red wine gal, though, it’s a good little switch up!

Do I have any beer drinkers out there? What’s your favorite summer drink or cocktail?

My favorite summer cocktail would definitely have to be the Mojito. SO good!

Okay enough about alcohol, I warn you: this post will be pretty random and all over the place… Embrace chaos!

Yesterday, as I was reaching in the fridge for dinner ingredients… I spotted the ring that I had “lost.”

No lie folks, this is where it was.

In the bottom drawer of the fridge! Ha, how bout that!

After tossing over some produce, I was pleasantly pleased!I have no idea how it ended up there (well I do kind of have and idea… it probably slipped off my finger or something and I didn’t notice)

My heart pinkie ring now has a home again!

Yes, my pinkie finger is quite long. Well, not just my pinkie finger, all my fingers. In fact, I just have big hands.

But, you know what they say?! Big hands, warm heart!

Or is it Big hands, big gloves?

Or big hands, big feet?

Or cold hands, warm heart?

Well, either way… It’s a win win win, cause I’ve got big cold hands and feet AND big gloves, so therefore…warm heart?

I don’t know where I’m going with this. I will stop.

Do you maybe want to see my breakfast of champions this morning? It’s a repeat breakie… An oldie but goodie!

These are the Butternut Squash Overnight Oats– except I made them with both steel cut and rolled oats! Just lovely! With maple infused hazelnut butter. Chyeah, it was good.

And you know what else I have been loving lately.

Shrooms.

Specifically, on top of spinach.

I had this last night for dinner:

The leftover rice and beans (from the Mexican sushi) with sauteed mushrooms and some salsa on top!

And I just had this incredible salad for lunch:

Spinach topped with sauteed onions and mushrooms + garlic powder, Sweet Potato, Avocado, and Balsamic Vinegar and pepper. Slammin' Combo!

This tasted darn good… The taste might have been enhanced by the fact that all my exams are over… But then again, maybe not… It was really just scrumptious!

I hope you all are having a great day like I am… But if not… Just remember what the wise Forrest Gump once said..

You’re SO stacked…

I’m talking about the pancakes I had this morning, of course!

After taking a second look in my Earth Balance tub, I realized it was moldy. I got scared, quickly removed the “butter” and doused the pancakes in a peanut butter chocolate sauce instead.

Much better! No mold-induced illness in my future!

I used this pancake recipe (using the flax egg and substituting some of the chickpea flour for protein powder) – These were REALLY delicious. And wow – the batter made so much!!

You can bet I licked my plate clean.

Seriously, I did… (I only do this when I’m in the company of myself…. Or people I’m super comfortable with 😉 )

No worries, I won’t embarrass you in public… No public plate licking for moi!

One of the MAIN reasons I made pancakes (besides the fact that they taste real good) is that I recently got an amazing pancake flipping spatula that I couldn’t wait to put to use!!

It’s as big as my face!!!

It’s so clear to me now.. that veggie burgers and yam fries are a winning combination!

Subject change:

Yesterday, I just had this powerful URGE to color. The coloring/drawing I used to do back in elementary school.

I followed my urge, whipped out these babies:

And started to draw… for a good hour and a half or so.

I felt like a kid again, it was wonderful 🙂

I hope the recipients like their home-made colored pencil drawn cards!!

I am feeling so giddy lately – maybe it’s a little summer fever?!?

Makes me want to wear my favorite elephant-patterned dress EVERYDAY!

And paint my nails pink and sparkly!

Life is just great at the moment and I’m so thankful.

Fun With Prunes! (I Promise)

Good morning everyone!!

You get the point…How YOU doin?!? 😉

It’s no secret that I like prunes.

It’s no secret that I LOVE nut butters.

It’s no secret that I haven’t showered in three days.

Oh wait… That was a secret. SHH!

But back to the prunes and nut butters – did you know that they go fabulously together?!

And when I say fabulous. I mean FAB-U-LOUS.

I hope you all like prunes because I have a really easy to make frozen treat for you today. Are you as excited as I am?!?

Yesterday, I had fun with prunes. How about that. Who knew that fun and prunes are a match made in kitchen?!

Prune Nut Butter Freezies

Ingredients:

  • Pitted Prunes
  • Any nut or seed butter you like!

Optional Toppings:

  • Cacao nibs
  • Coconut shreds
  • Chocolate sauce (1 tbs melted coconut oil+1 tbs unsweetened cacao powder+liquid stevia)
  • Nuts/Seeds

Procedure: these are so easy!!

  1. Flatten a prune with the back of a spoon. (Or make a little bowl shape with the prune)
  2. Dollop a little nut or seed butter of your choice onto the prune.
  3. Add additional toppings if you like! (get creative!)
  4. Freeze for about an hour. Leave in freezer and enjoy at anytime!

These treats don’t actually freeze per se – but the prune and nut butter get kind of this yummy doughy texture. These are just so simple, but SO good!

For my prune freezie topping variations I did:

  • Sunflower seed butter topped with sunflower seeds.
  • Peanut butter topped with coconut shreds
  • Peanut butter topped with cacao nibs
  • Cashew butter topped with cashews
  • Sunflower seed butter topped with chocolate sauce and coconut shreds
  • Prune bowl topped with peanut butter and a hazelnut

Just go…

Make these!

You won’t regret it!

SEMI OFF TOPIC: (this prune post reminds me of how uncomfortable the feeling of prune-y fingers is after being in water for too long…) You know what I’m sayin’?

Okay back on track!

The making of this sweet treat contributed to the almost emptying of my peanut butter jar….

You do know what that means, right?!?!

Dum da da DUM…OATS IN A JAR!

My favorite! There is nothing better than oats in a jar (breakfast wise)… Scooping out the oats while getting a little of that peanut butter bottom is just divine…

Ha, peanut butter bottom makes me think of a peanut butter booty. (one can dream)

But don’t worry,  I am referring to the peanut butter bottom of the jar.

This morning my oats were:                          Raspberry Oats in a PB Jar

1/8 cup steel cut oats, 1/4 cup rolled oats, 1/2 tbs chia seeds, 1 cup water, 1/4 of a frozen banana, and some raspberries. Cooked the oats on the stove top, whisking constantly. Added the banana and chia seeds. Kept whisking - and finally, added the raspberries. Yum yum in my tum.

This frozen chocolate spoon I made with the left over chocolate from the Prune Freezies! Oh so yummy - chocolate, raspberry, peanut butter - might as well call it heaven (or my belly)!

Now this jar is EM-TEE!

Rest in peanuts peace.

Another empty nut butter jar – wonder if I can empty the rest of my jars before I move out?!? It’s a challenge I’m willing to eat take.

A Food Network Experience: Triple D’s Style!

Hey there!

In order to celebrate my roommates birthday yesterday, she suggested we go here:

As soon as I Googled Jethro’s Fine Grub and found out it appeared on Diners Drive Ins and Dives, I was totally in! (to view the you tube clip from Jethro’s on Triple D’s click here)

I am a HUGE Food Network fan, and anything having to do with the food network gets me pumped!

So I was PUMPED to go here!

After about a half of an hour wait outside (the place is absolutely tiny & busy)… and another 30 minute wait for our food..

The BIGGEST MOST HUMUNGOUS PANCAKES I HAVE EVER SEEN arrived at our table.

The birthday girl had to go big or go home, and big she went!

Do you see the size of those things????!!! They took up half of the table!!!

I was definitely neither game nor hungry enough to get their “pancakes”

So I opted for a veg friendly option appropriately named:

Got it without the rice though.

It was delicious!! Loved the green curry sauce and apple fennel slaw!!

I ended up ditching about 3/4 of the tortilla portion because it was just too much tortilla for me! I dumped the rest of the filling on the salad greens and gobbled it up! YUM-Y!

Brenna did pretty well with her pancakes considering the size..

You know that pancake portion size is OUT OF CONTROL when…

  1. Basically everyone whips out their camera phones to take a picture as soon as their pancakes arrive…
  2. They take up most of the table… and
  3. You need… not one, but TWO take home containers for left overs!

This just makes me laugh... I am STILL stunned at the size of those cakes!

All in all, I had a great time and great experience doing my Diners Drive Ins and Dives thang! Happy Birthday to Brenna!! Thanks for taking me here 🙂

Woot Woot!

Has anyone else been to a place featured on Triple D’s? If so.. How was it?!?!

Today is going to be another study filled day!! Really looking forward to it!!!

not… 😉

But first, I’m going to take some of this energy out at the gym!

I just fueled up with a nice breakfast:

Chocolate Hazelnut Smoothie: 1/2 frozen banana, 3/4 scoop chocolate protein powder, a bit of cacao powder, 3/4 cup non dairy milk, 1 tbs hazelnut butter. Along with a triple threat Banana Nut Blueberry Muffin!

I couldn’t wait to take a sip and a bite before the pic was taken – ’twas a hungry morning!

You’re SO Granola! and…Rock Chalk!!!!

Yesterday, I had a paper to write, laundry to do, and a nap to postpone.

Well,

I didn’t end up postponing my nap, I headed straight to bed and passed out for about two hours. From 7 to 9p.m. – It was much needed and I felt super energized afterwards! (Although I always am a bit thrown off when I fall asleep while the sun is out and wake up to the darkness of the night)

My nap gave me the motivation to do laundry, and finish my paper procrastinate!

When I want to procrastinate while still feeling semi-useful – I cook! We all need to eat, right?!?

I made granola instead of writing my paper… 🙂

I never really fully understood why people used the term “granola” to describe those who eat super healthy and “hippie”esque… Saying “granola” almost as if it was an insult… NEWS FLASH: granola is amazing!! Especially home-made granola!!

Just watch out! Not all granola is healthy! – a lot of store bought brands have a TON of added sugar and sketchy oils (so read the ingredients carefully!) When I buy granola (which is rare).. I make sure there are minimal ingredients, and that it’s sweetened with a natural sweetener, such as agave nectar or maple syrup.

My favorite so far is this brand!

Before making my Apple Cinnamon Hemp Seed Quinoa Granola, I made apple chips first! So easy and so yummy!

All you need is: 2 1/2 smallish apples (I used Granny Smith, and Cinnamon!)

– I had to repeat this process twice (not all the apple slices will fit onto the baking sheets) Unless of course, you own a HUGE oven and a HUGE baking sheet… (if so, I’m jealous!)

1) Preheat oven to 200 degrees F.

2) Slice the apples as thin as you can and spread them onto baking sheets lined with aluminum…

3) Sprinkle liberally with cinnamon (both sides)…

4) Place in the oven, leaving a small opening to let the moisture out – I used a spoon to keep a small crack in the door.

5) Finally, bake for about 1 – 1 1/2 hours (until crispy)!

After I made these amazing and easy apple chips, onto the granola I went!!

APPLE CINNAMON HEMP SEED QUINOA GRANOLA

I had the idea of putting hemp seeds in them because yesterday I went to Whole Foods ( just to pick up a couple things) and looked through this pamphlet:

And read about how great they are for you! (Filled with tons of protein!)

Don't get too excited!!...."don't expect a high from the Cannabis sativa plant, which contain virtually no THC."

Here are the healthy, nutritious and delicious ingredients for my

APPLE CINNAMON HEMP SEED QUINOA GRANOLA (inspired by this recipe)

  • 1 1/2 cup rolled oats
  • 1/3 cup uncooked quinoa
  • 3/4 cup hemp seed (add in the hemp seeds AFTER baking – this is very important because when hemp seeds are heated the good fats turn into trans fats… a.k.a BAD fats!)
  • 3/4 raw almonds, (chopped or sliced)
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw walnuts, chopped
  • 1/4 cup shredded unsweetened coconut
  • 1/3 cup sultana raisins
  • 1/4 cup maple syrup
  • 1/4 cup melted extra virgin coconut oil
  • 2 1/2 tsp cinnamon
  • About 3 cups of the cinnamon apple chips (add these in after baking!)

Procedure:

  1. Preaheat oven to 225 degree.
  2. Combine the dry ingredients (except for the apple chips and hemp seeds) with the wet ingredients in a large bowl.
  3. Stir well – coating all the granola with the maple syrup and coconut oil.
  4. Spread onto baking sheets lined with parchment paper or aluminum foil.
  5. Bake for 1 1/2 hours (or until golden brown).
  6. Once the granola is baked, add in the hemp seeds and crumbled apple chips.
  7. Voila! YUMMY/ Healthy, granola! (alot less expensive than buying it too!)

This Granola is AMAZING! And this recipe made LOTS!!

This morning, I used the leftover apple slices to make an Apple Cinnamon Peanut Flour Oatmeal topped with the wonderful granola!!

SUCH yummy eats!

And with my tummy full, I was able to FINISH MY PAPER!! WOOOOO!

And now… I’m ready to watch the big game tonight!!
