Earth Day Bearthday!

Happy Earth Day everyone!

I’d just like to take a moment and give a great big hug to this wonderful planet of ours.

I realize this sounds cliche, but it should be:

I love our planet, and I sometimes worry about our future generations and the earthly problems that they will have to deal with. But anyways, I won’t get political here…

Let’s talk cleaning!

I found this great website with all the recipes to make natural cleaners for basically anything! I thought it was great!! You should check it out!

All you really need is:

  • Baking Soda
  • Vinegar
  • Hydrogen Peroxide
  • All Natural Tea Tree Oil And Grapefruit Oil (which have known antibacterial properties) And Lemon Juice
  • Liquid Castile Soap

To make:

Surface Spray, All Purpose Liquid Cleaner,All Purpose Abrasive Cleaner, Refrigerator Cleaner, Oven Cleaner, Microwave Cleaner, Dishwasher Detergent, Gorgeously Green All-Purpose Spray, Fruit and Vegetable Wash, Drain Cleaner, Window, Glass and Chrome Cleaner, Toilet Bowl Cleaners, Scrub with a toilet brush, Tub And Tile Cleaner, Soft Scrub for Fixtures, Mildew/Germ Killer, Mildew/Germ Killer 2, Wood Floor Cleaner, Linoleum Floor Cleaner, Carpet Stain Remover, Carpet Deodorizer, All-Purpose Carpet Cleaner, Air Freshener, Furniture Polish, Metal Polish (copper and brass), Powdered Laundry Detergent, Liquid Laundry Detergent, Laundry Pre-treatment, Fabric Softener, Bleach Alternative (Laundry)………….

Anywho, you get the point! Pretty much any type of cleaner you can image can be made easily at a low cost to you and the environment! WIN.

I love using fruit and vegetable wash, but it’s quite expensive, so when I run out, I will salvage the bottle and make my own 🙂

I want to try and make it a point to make natural cleaners! For me, there’s no excuse not too!

Onto other greenness!

I bought this wine in lieu of the holiday:

Cono Sure Cabernet Sauvignon Carmenere Organic Wine

They were voted green company of the year in 2011!!

I’ll support that – ESPECIALLY if it involves wine 🙂

Plus, It came with this sweet bracelet!

Now let’s chat about recycling. Just a casual little chat…

I’m really happy that my roommates and I recycle and all, buttt, we seem to have trouble with the TAKING OUT part of recycling.

Although this photo goes up with embarrassment, THIS is our balcony.


Yes, you see that right, it is FULL of recycling. To the point of ridiculousness!

We may need to be on the show HOARDERS soon.

To be fair, I have 5 roommates (so it piles up very fast!)…and we have all been very busy with exams and studying. There is no excuse though. I think now that the recycle pile has gotten THIS BIG, no one is willing to tackle the project on their own.

Roommates unite- recycle we will conquer thee once and for all.

Let’s Go to the Tropics!!

With this tasty

Tropical Orange Mango Fennel Salad w/ Toasted Almonds

Ingredients:

For the salad:

  • 1 medium fennel bulb
  • 1/4 cup finely sliced onions
  • 1 small pit-less orange
  • 1 mango
  • 1/3 cup sliced roasted red peppers
  • 1/2 cup blanched diced almonds

For the dressing:

  • 4 tbs apple cider vinegar
  • 2 tbs melted virgin coconut oil
  • Tabasco sauce (last minute add in – unpictured)
  • salt and pepper to taste!

Procedure:

1) Finely slice the salad components like so:

2) Place in a medium mixing bowl

3) Put the almonds in a pan on medium heat and stir until they go from this:

To this:

(Once the almonds are golden – remove from heat immediately – they burn quickly!)

4) Add the almonds to the salad and toss in the coconut oil and apple cider vinegar. Salt, pepper and Tabasco to taste!

The tartness from the vinegar in contrast with the sweetness from the fruit and oil with a little kick of spicy from the Tabasco really works! Very tropical!

Just a little note: If you refrigerate the salad, the coconut oil kind of “hardens” and makes the salad not look as pretty – but it’s still darn darn tasty!

I love the licorice-y taste of fennel! I know some people absolutely cannot stand this taste – what are your thoughts on fennel or licorice? Is it a yay or nay in your taste bud department?

Cinnamon Apple Oats: Heated in the micro wave and topped with maple syrup! MMmmm!

recent snack:

Chilled Peanut Butter Green Protein Pudding - 3/4 scoop vanilla protein powder, 2 tbs peanut flour, 1/2 frozen banana, 1 tbs chia seeds, 3/4 cup water, a huge handful of spinach. All blended together in the magic bullet and placed in the freezer for about 35 minutes. Realllly good! Tastes like dessert!

recent lunch:

Veggie burger topped with a boat load of toppings: avocado, hummus, ketchup, mustard... I love ketchup! With this beet salad on the side.

Today is going to be a study day for moi! I want Saturday to be here. SUMMER BREAK IS. SO. CLOSE.

Monday Mishaps…Onesie Wonders

Well, hello! Glad to see you stopped by!

So you know how I usually get REALLY excited and enthusiastic about all the yummy food I make?!? (In all complete modesty of course)…

Well, today will not be one of those days.

I have a screw missing in my brain this Monday… My breakfast, and my gluten free baking attempt…both sucked.

You win some you lose some, right?

Enter my failed breakfast:

Breakfast cookie topped with cinnamon and coconut butter. Mixed berry "green" smoothie.

My breakfast cookie this morning tasted off… I didn’t add the almond milk like I usually do – which resulted in a sticky/gooey texture not super pleasing to the palate. And my dark purple brown smoothie- looks delish, huh? Yeah, that was off as well – I made it with the pumpkin seed protein powder, and didn’t put a frozen banana, which just made it taste very “earthy”… Not the best folks, not the best.

You know what else was not the best? This gluten free/ vegan refined sugar free cinnamon raisin bread I tried to make this morning.

I followed a recipe for a normal gluten free bread for the proportions, but I went wild with the vegan, cinnamon, and raisin aspect of this bread. My wild side didn’t completely pay off… This wasn’t a complete failure… Texture wise it’s pretty alright, taste wise, not what I was going for.

You know the smell of freshly toasted:

That’s what I was going for – THAT smell, and a similar taste…

Not THAT smell, and not THAT similar taste…

I will definitely try making a healthier version of the cinnamon swirl bread we all know and love, but this time I may try and swallow my pride and follow a recipe… Ain’t nothin’ wrong with a little direction!

If that second baking attempt doesn’t go as planned… I may just leave the bread baking to the experts.

But hey! At the end of the day (or the beginning- it’s still the morning), I am not complaining…I mean, what fun would it be if all cooking adventures resulted in pure amazingness?! Not that fun at all….Failed attempts make you really appreciate and excited for the successful attempts (and when I say “you” I mean me).

A Pizza Kinda Morning!

Hello!

This morning I was craving a PIZZA. More specifically, a breakfast pizza!

And since I’m moving out of my campus residence soon, I’m on “operation use up everything in my fridge/freezer mode.”

So a breakfast pizza was the perfect choice!

I was able to use up some frozen fruit, a brown rice wrap, and some frozen banana that have been hanging out in my freezer for a while!

I am not kidding you, I think I ate this in 30 seconds flat. I DEVOURED it. It was THAT good!!

Mmmm!

Here’s what my Breakfast Pizza consisted of:

Crust: A brown rice tortilla wrap

Sauce: 1 scoop Sunwarrior Vanilla protein powder+ 1 tbs sunflower seed butter + 5 drops liquid stevia + almond milk = the perfect pizza sauce!

Topping: Sliced frozen banana, frozen blueberries, shredded coconut, and cinnamon!

***Procedure: Construct pizza and place in a 350 degree preheated oven for about 5 – 7 minutes (until all warm and perfect!)

Seriously delicious, and seriously filling! But not too serious… we like to have fun around here 😉

Here are some of my other recent eats:

Baked sweet potato topped with coconut butter and cinnamon, then refrigerated until coconut butter is hardened! This combo is SOOO good!

Cooked Kale topped with nutritional yeast, falafel, avocado hummus, and ketchup!

Chocolate Protein Pudding! (1 scoop vanilla protein powder, 2tbs cacao powder, 1 tbs coconut flour, 1 tbs chia seeds, 1 tbs buckwheat groats, 5-8 drops liquid stevia, almond milk) Mixed together and refrigerated for a couple of hours! Really really good!

Quinoa cooked in tomatoes and spices with peas and kalamata olives.

Baby carrots, lots and lots of baby carrots!

Homemade Iced Tea (great to use up all that loose leaf tea I have!)

What’s Love Got to Do With It? Nothing…It’s All About Options!

Bon matin tout le monde!! (Good Morning Everyone!!)

Yesterday’s studying was pretty productive!! (especially since I was well prepared with my study snacks!)

Today I’m back at it again! The library: here I come!…

With snacks of course.

Snacks… and Options, lots of options!

I prepared my library snacks last night so I wouldn’t have to stress this morning… Along with options though, love does have a lot to do with it (the title of my post lied!)

I love preparing and packing snacks/ meals to go. There is something I find so charming about perfectly packing foods into their own little dedicated container…. I find it fun. And don’t get me started on the containers themselves…. Bring me to a container/jar store and I would have a hoot and a half! I love containers.

Oh, and I love snacks too.

When I pack snacks I like to have LOTS of options…

How do I know what I will feel like eating at that moment when my face is planted in a book and the belly monster begins to slowly creep up and suddenly….HUNGER STRIKES!

Will I want something sweet? Something salty? Something sweet and salty? Neither? Will I want crackers? Will I want rice crackers or Mary’s crackers? What if I just want chocolate?!? Or oatmeal?!?!

For Pete’s sake, I GOTTA have options, ya know?!

So, here’s what I prepared for my study snackin’ for today!…

Apples with cinnamon in a jar... And a new concoction I stirred up! It is green because the dip is made with pumpkin seed protein powder (which is green) and peanut flour mixed together with H2O.

My mom recommended this pumpkin seed protein powder to me, and when I saw it was on sale, I thought it to be a golden opportunity for its purchase! I really love it and am SO glad I bought it… Mama knows best..(Usually) 😉

A kitchen device I would rather not have to live without!! The apple slicer - The symmetry of the slices are not always spot on - but that's okay! I eat the little ones first and save the best (big slices) for last!

I also roasted the rest of the purple potatoes from the market, with broccoli, garlic, rosemary, and nutritional yeast. All coated in a little grape seed oil.

After roasting the broccoli and potatoes, I added some raw sliced red pepper, kalamata olives, salt, pepper, and some apple cider vinegar.

I packed the mixture up in this handy container and topped the veggies with some falafel and avocado hummus.

All in all: I packed…

  1. Cinnamon apples with pumpkin seed/peanut flour dip.
  2. A bag of baby carrots.
  3. Crackers… (2 kinds: Mary’s and brown rice)
  4. Trail Mix
  5. Dark Chocolate
  6. Roasted veggies w/ falafel and hummus.
  7. Apple cinnamon oatmeal (in almond butter jar)
  8. An orange
  9. 2 Larabars
  10. And brewed herbal tea in a jar.

Is this too much? No, it is not…

Not only will I not let myself go hungry, I refuse to let my study partner go hungry as well. Or anyone in the library for that matter…

Plus, I know that I am not packing too much food when…

It all fits into my FAVORITE lunch bag! I can still close it and everything!

It’s Friday Night, and I Just Got Paid!

Hello!

How’s everyone’s Friday going?!? Good I hope!

Since my refrigerator is officially empty, this morning’s breakfast had to be a good ol’ simple green smoothie with granola!

These never disappoint!

  • 1/2 frozen banana
  • 1tbs coconut flour
  • 1tbs chia seeds
  • 1tbs sunbutter
  • 1 scoop vanilla protein powder
  • Spinach!
  • 1 cup non-dairy milk

Yum yum yum, in my Tum!

I also had a really yummy green smoothie last night with din din!

Can’t get enough of the green stuff! I added a little peppermint extract to make it minty!

My dinner was really good and very easy to make!! It was Quinoa a la Italiano!

I cooked:

  • 1 cup quinoa in..
  • 1 (15 oz.) can unsalted diced tomatoes and 1/2 cup water and added
  • Some basil, Italian Seasoning, Garlic Powder and salt
  • Let it all cook up then added spinach and kalamata olives at the end!

The quinoa cooked in the tomatoes is really good!

To cook quinoa,  add the quinoa and liquids into a pot, let it boil, then cover and simmer for 15 to 20 minutes!

I saw this photo posted on facebook and I could definitely relate!

I tend to get a little on edge when I’m hungry! I’m like a ticking time bomb, If I don’t get food in my tummy then I feel like all h.e. double hockey sticks (LL) will break loose.. Who else is with me?!?

But as soon as I’m fed, I’m back in action!!

I’m Not Green TEAsing You…This Is Mashed Up!

This post involves green food.

Green tea.

Tea in general.

And a flop of an attempt at lunch – which turned into a mash up.

This morning, a good ol’ fashioned toasted toast with peanut butter was calling my name.

I spread some coconut butter on top as well. It melted into a peanut buttery coconut goodness.

The green smoothie gods were also calling my name. I simply needed a smoothie, more specifically, a green one!

1/2 ripe frozen banana, 1/4 cup frozen berries, 1 scoop vanilla protein powder,1 cup non-dairy milk, and a HUGE handful of spinach. Blend away!!

These smoothies are so good!!

I gobbled this one down in two seconds. 😦

I want to be one of those people who can drink/eat slowly, but I really don’t think it’s possible. Especially when you put a green smoothie in front of me.

Or this cocktail:

Last night I went to my friend Brittany’s birthday dinner celebration. (Happy Birthday girlie!) We went to a very yummy restaurant with really cool/original cocktails.

As soon as I saw the ingredients in this one, I knew I had to have it!

Tequila AND tea?!? YES please. And Thank You. This was SO good!

The food was also great. I had:

Roasted beet salad, with pear, goat cheese, and beet chips!

Topped with a soft boiled egg! Hail to that liquid yellow center!

The night was filled with good food, yummy cocktails, and great company!

Now onto a not so successful food adventure.

My lunch.

It tasted really good, but was definitely NOT what I was going for. I attempted to make a quinoa/butternut squash pizza crust- HA, that ended up being a joke. It didn’t work! I have made a quinoa crusts before, but I guess the addition of the butternut squash didn’t work. So anyways, I baked the “crust” a little bit, but it was mush. Tasty mush. I added my pizza toppings in the mush crust and baked that all for 15 minutes.

I call this my Pizza Mash Up!

Put a little spinach underneath (because spinach for breakfast and lunch is good for you) 🙂

Now I am sipping on some green tea and nibbling on dark chocolate!

I can’t believe it’s already Friday! The weeks are flying by!

To start the weekend off on the right (or left) foot.. Here’s one of my favorite really lame hilarious jokes of all time.

I read it in a magazine a long time ago, and it has never left my mind.

Here it goes!:
